Cryptosporidium parvum

Note: This is a pathogenic microbe that MAY jeopardize cider safety.
ID: Cryptosporidium parvum is a parasitic protozoan.It can be harbored by cattle and other animals, and spread in animal feces. The infective form (oocyst) is chlorine-resistant and may contaminate water supplies.

CHARACTERISTICS
Only metabolically active and reproducing while inside a host organism.
Not resistant to heat
Survives poorly during freezing or frozen storage
Extremely resistant to sodium hypochlorite and other chlorine-containing sanatizrs

ASSOCIATED ILLNESS(ES)

Causes diarrhea and related symptoms. Particularly dangerous to immunocompromised persons

KEY STRATEGIES FOR CONTROLLING
Prevent fecal contamination of apples by keeping animals out of orchards or not using manure in orchards
Use potable water from an approved source for all rinsing and washing operations
Heat pasteurization or UV treatment of cider should adequately ensure destruction of Cryptosporidium oocysts
